
Once again last week’s attempt at a culinary delight from my kitchen was a bust. I’m ready to give up and just go back to our menu of frozen pizzas and sandwiches. I feel as though I am wasting a good part of our ‘food budget’ with experiments that never quite make it to our dinner plates. What was wrong with the last dish? Well, it had a great flavor but the biscuits (aka dumplings) just were really gooey and I just can’t stomach biscuits that are not done. Plus the little bit I ate gave me an aggravating case of acid reflux (which I am not generally prone to).
So that is my rant about cooking. The result of my recent failures found me succumbing to buying Pillsbury’s Most Requested Recipes magazine for casseroles and slow cooker meals while waiting in the checkout lane of the grocery store – where I was purchasing rolls for sandwiches.
So this weeks recipe that I am going to give a try is:
Sausage Ravioli Casserole
INGREDIENTS:
| 1 | (25-oz.) pkg. frozen meat-filled ravioli |
| 1 | tablespoon olive oil |
| 2 | garlic cloves, minced |
| 2 | small zucchini, cut into 2×1/4×1/4-inch strips |
| 1 | (28-oz.) jar three-cheese pasta sauce |
| 1 | (14 1/2-oz.) can Italian-style stewed tomatoes with garlic, oregano and basil, drained |
| 1 | (4.5-oz.) jar Green Giant® Sliced Mushrooms, drained |
| 4 | oz. (1 cup) shredded mozzarella cheese |
DIRECTIONS:
| 1. | Heat oven to 350°F. Spray 13×9-inch (3-quart) glass baking dish with nonstick cooking spray. In large saucepan, cook ravioli as directed on package. Drain; cover to keep warm. |
| 2. | In same saucepan, heat oil over medium-high heat until hot. Add garlic; cook and stir about 1 minute. Add cooked ravioli and all remaining ingredients except cheese; stir gently to mix. Pour into sprayed baking dish. Sprinkle cheese over top. |
| 3. | Bake at 350°F. for 25 to 30 minutes or until casserole is bubbly and cheese is melted. |

Well geez…sorry your dumplings didn’t turn out. I love dumplings in my stews.
The ravioli casserole sounds GREAT! Good Luck…doesn’t look like you can miss with that one.
I don’t see how this new one could go bad. It sounds great. Let me think on what recipes are easiest for me…I’ll get back to you…
Don’t give up, easy Fall cake recipe:
any spice cake box mix
can pumpkin
ff diet van pudding
cool whip
mix cake mix with pumpkin bake as box says, make pudding with skim milk put aside, when cake done, poke holes in cake and pour pudding over it, top with cool whip when it is cool.
