Outside My Window…it’s foggy but as soon as the fog burns off it is supposed to get up to 76 degrees today.

I am thankful that…Snickers is beginning to sleep more during the night. She went out before we went to bed at 10:00 and did not need to go out again until 2:00 and again at 5:00.

From the kitchen…I don’t think I ever gave an update on the Sausage Ravioli Casserole….it was awesome. In fact, I just made a double recipe this weekend for company and it was a big hit served with Five Cheese Texas Toast. Another recent success from the kitchen is:

Tater Nugget Hot Dish

Ingredients

  • 1 lb lean ground beef (at least 80%)
  • 1 (10 3/4 ounce) can condensed cream of mushroom soup with roasted garlic
  • 1 (10 3/4 ounce) can condensed cream of chicken soup
  • 1 can french style green beans
  • 1 (16 ounce) bag frozen potato tator tots (4 cups)

Directions:

  • Heat oven to 375°F.  In 10-inch nonstick skillet cook beef, stirring frequently, until beef is thoroughly cooked; drain.
  • Stir in both soups and the green beans, spoon into ungreased 2-quart casserole.
  • Top with tator tots.
  • Bake uncovered 40 to 50 minutes or until mixture is bubbly & potato nuggets are golden brown.
  • Cover with shredded cheddar cheese and bake until cheese melts.

 I am creating…cards to sell. Not an easy task. Having to choose a few select photos out of the thousands that are in my portfolio has been a daunting task.

From the learning rooms…I’m  a little frustrated in this department. I feel as though I have not been quite as hands on as I should. She does her lessons and I check them but I am unsettled with the learning that is taking place. As always I struggle with knowledge and the ability to take a test.

I am going…to show the movie “One Flew Over the Cuckoo’s Nest” in my classes this week. Two more weeks and the Fall semester will be heading into Finals week.

I am readingWorld Without End by Ken Follett. I read Pillars of the Earth about twenty years ago and was mesmerized by it. I feel the same way about this most recent book. It is awesome.

I am hoping…to get my ornament package mailed off to my Ornament Exchange Siesta Sister by tomorrow.

Around the house…I was able to get some dusting done this weekend – a task I absolutely hate!! I am ashamed to say that the last time I had dusted was in August. Needless to say the dust rags were in a pretty disgusting state. I am beginning to get the urge to declutter again.

    LOL my anti-spam word was “shop”. Must be a sign that I haven’t bought anything for Christmas yet.

    Oooo… I used to love Ken Follett. Haven’t read anything by him in a long time. Of course, I read so many “school” books now. I hate to assign something for the kids to read that I haven’t pre-read. Sometimes it’s wonderful, though. I just finished reading Jane Eyre. Can you believe I’d never read that? I loved that book! Also, I wanted to say thanks for directing me to the Manatee Gift shop in the Best Western in CR. I found an awesome ornament there! We all went Saturday and just loved it. It was totally unique and not expensive. I couldn’t believe the selection of Crocs styles they had in that little store. Awesome! Love the scrapbook page! Also, I hvae to ask: What is a Siesta Sister?

    Hee…the only time I dust is when we move furnature around and see the finger prints in the layer of dust. Ah man! Now I have to dust!

    Good to hear from you again! Was wondering if things were okay. They’ve been busy here. One thing after the other. C’est la vie. I guess. So they say.
    Dust…something I was supposed to do today. Mt. Laundry took over though.

    I’m glad to hear that World Without End is good. I read Pillars of the Earth a few years ago too and loved it. I have WWE and am looking forward to finally having time to start it after the holidays.

    Great daybook.
    I too stuggle with what the kids are learning. Some days I just think they should know what I know. I tend to forget that when I was their age I didn’t know all that I do now.

    THe recipe sounds really tasty -and easy too. I’m just wondering if that would cover the potatoes enough to fool my two little autistic grandkids into thinking it was some kind of pasta and not potatoes?
    Also -on the book front -just wondering here, but have you ever read “The Shack” by William P. Young? I’m working on reading it off and on now -finding it quite interesting too.

    “Dust?” Eeeewwww. Today was the day I had planned to get the entire apartment dusted. Well, I did dust one end table. Maybe tomorrow.

    I love the sound of your recipe. Sadly, my child (the one who eats) HATES potatoes! Can you believe it!
